Confession…This is my first blog in 9 years!

From establishing the B&B and having two kids to follow, it has been a whirlwind few years! I feel like I am almost out of the trenches… but with small business and kids do you ever really get out?!

As I begin the 9th chapter of Amberesque, I am eager to bring my International breakfasts to life and share them with my Amberesque family – who are keen to expand their cooking to new worlds. I am now offering intimate cooking workshops on every international menu I release.

Last year, we went on a Aegean cruise. We stopped in Kusadasi on the coast of Türkiye for the day, and we ensured we sampled as many Turkish flavours as possible. My “Pide” and joy of my Turkish menu is my Breakfast Pide!

My first International cooking workshop is a Turkish Breakfast Pide, and here is how you can make it:

Breakfast Pide

Makes 2 x Pides

1 cup of Self-raising flour (or plain flour with 2 tsp of baking powder).

1/2 cup of Greek yogurt

1 cup of sliced capsicum into strips

1 cup of sliced mushrooms

1/2 small sliced onion, cut into strips

1 cup of grated Cheddar cheese

1 tablespoon of dried oregano 

Good quality olive oil

2 Eggs

Parsley 

Preheat fan forced oven to 200 degrees.

Step 1

Combine the flour and baking powder in a mixing bowl. Stir in the Greek yoghurt.

Once combined, use your hands to kneed the dough. Cover and put aside.

Step 2

Mix oregano, garlic and olive oil in a small bowl. 

Step 3

Sauté the onion, capsicum, and mushrooms with oil and S&P in a hot pan until slightly softened, then allow to cool.

Step 4

Divide the dough into two balls. On a floured surface, roll out an oval about half a centimetre thick and 30 cm long.

Step 5

Layer the dough with cheddar, onions, capsicum, and mushrooms. 

Step 6

Pinch in the ends of the dough and then fold the edges over to create an open parcel.

Step 7

Brush the oregano mix over the pastry and on top of the open section of the Pide.

Step 8

Gently lift the Pide onto a baking sheet lined with baking paper and bake in the oven for approximately 8 minutes.

Step 9

Remove the Pide out of the oven and crack the egg onto the open section of the Pide. Return the Pide to the oven for approximately 5 minutes or until the egg is cooked to your liking.

Step 10

Remove the Pide from the oven and sprinkle with parsley. It can be served whole or sliced into quarters. 

The beauty of baking your own Pide is you can design your own filling, just like a pizza!
